As mentioned several times in my blog, Fall is my favorite season and I am a HUGE festive person. When October comes, I want to go to every pumpkin patch, pick every apple, and take my kids to every “trunk-or-treat” I can find. Well, this year looks a little different, and to keep my family safe while continuing to quarantine, I decided to get a little creative and bring the Fall festivities to our home.
I made a bunch of treats like cupcakes, we bought cookies, popcorn, and chips. I also took my first stab at making Chex Mix. I found an irresistible recipe from the Country Cook and I knew I had to try her Fall Chex Mix recipe. Man-o-man. We fell in love with this snack. We had so much leftover I ended up putting the mix in mason jars and gave them away. With all the leftover snack mix, I started thinking about what else I could make with these ingredients and the most obvious solution came to me, which was to make, what I now call Fall Chex Mix Squares.
Ingredient Suggestions for these Fall Chex Mix Squares
One of the biggest turn-offs I had about making Chex Mix was the Bugles. I am not a fan. However, I totally get how they are essential to making homemade Chex Mix, but they’re not something I would just grab a bag of and eat. Typically, in most Chex Mix recipes there’s Rice Chex Mix, Bugles, and pretzels. I guess you can say that is the base. From there, depending on if you are going sweet or savory, you add whatever you want.
I wanted to stick with the Fall season so I added some additional flavors that would make these squares look festive but would also go well together. In this recipe, I added candy corn, Reese’s Pieces, and lightly salted peanuts. Here are some ingredients you can add to your Chex Mix recipes or these squares:
- Mini Reese’s Peanut Butter Cups
- Bagel Crisps
- Oyster Crackers
These Fall Chex Mix Squares are a perfect treat to enjoy. They are great for holiday parties, potlucks, or just because!
Take all of the ingredients you enjoy in your Chex Mix and turn them into squares! Combine Rice Chex Mix, pretzels, salted peanuts, Reese’s Pieces, and candy corn into an addictive treat.
- 5 tbsp. Butter
- 12 Oz Marshmallows
- 5 c. Rice Chex Mix
- 1 ¼ c. crushed pretzels
- ½ c. slightly salted peanuts
- 1 c. Reese’s Pieces
- ½ c. Candy Corn
- Spray a 9X13 casserole dish with baking spray or non-stick spray.
- In a large pot on medium heat, melt the butter and add the marshmallows. Stir until the marshmallows have melted. Remove from heat.
- Right away, add the Rice Chex Mix, crushed pretzels, and stir into the melted marshmallows. Add the salted peanuts, Reese’s Pieces, and candy corn and stir until evenly mixed. Pour out onto the prepared casserole dish. All the mixture to set, about 30 minutes to an hour, and cut into squares.
