Banana Pecan French Toast

This Banana Pecan French Toast recipe is made with Brioche bread and a sweet and nutty topping made with butter, brown sugar, cinnamon, Bourbon, sliced bananas, and pecans. You will never want French Toast any other way.

Can you believe there was a time in my life where I didn’t like French Toast…at all! I couldn’t stand it. In my house, french toast was made with thin pieces of white bread, dipped in heavy egg batter, and fried in already burnt butter (sorry mom). Of course, I wouldn’t like french toast with an introduction like that, right? I thought it was absolutely disgusting and way too “eggy”.

Now that I am older I have found a great appreciation for the wonderful dish and even prefer french toast over pancakes most days. What I find very interesting about french toast is its versatility. You can get really creative with a french toast by creating different toppings and even coat the toast with corn flakes or chopped almonds and it will take your french toast to a new level. Another thing that is important to french toast is the bread. Don’t you dare use Wonderbread for your french toast! Don’t do that! Get an uncut loaf of country white bread and cut the bread into thick slices. You can buy Thick Toast at Kroger. Or, you can use buttery brioche bread. But whatever you do, just don’t use thin pieces of sandwich bread.

I know that I am kind of jumping around here but just bare with me for a second. I don’t like IHOP either. I loathe and detest the stuffed french toast recipes they come out with. Why? Well, I am what some people call bourgeois (boo-gee). Meaning, that I like the finer things in life as opposed to the more convenient and lesser quality options. First of all, that is so untrue. Take me to a “hole-in-the-wall” or burger joint on a date any day and I am a happy girl. However, as I am growing up and becoming more willing to try different foods,  my taste buds are craving different flavors and food combinations, and pairings that send my tummy into a state of happiness. With that being said I more than likely able to taste processed and pre-packaged food a mile away. And let me tell you something people, that crap they serve at IHOP is prepackaged and seriously processed, which makes it gross and just full of sugar.

(Graduation song) So people, make a stand for you and your eating experiences. Eat delicious food that you make at home from scratch with your families. Throw away the boxed foods and stop dining at over-processed restaurants. Stand with me and shop at your local farmer’s markets and stay away from food that has dollar store quality. SAY IT WITH ME:

Description

Made with Brioche bread, this Banana Pecan French Toast recipe is topped with sliced bananas, pecans, with a touch of Bourbon. You will never want French Toast any other way!


Ingredients

TOPPING

  • 8 tbsp. butter
  • 1c. light brown sugar
  • 1/2 c. heavy cream
  • 3 medium bananas, sliced
  • 1/2 c. pecan pieces
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt
  • 1 tbsp. bourbon (optional)
  • dash of cinnamon

FRENCH TOAST

  • 4 eggs.
  • 1/2 c. heavy cream
  • 1 tsp. vanilla extract
  • 1/4 c. sugar
  • 1 tsp. cinnamon
  • 2 tbsp. butter
  • 8 Slices of Brioche Bread

Instructions

  1. In a medium skillet melt 8 tablespoons of butter on medium heat. Once the butter has melted, add the brown sugar and stir until the brown sugar has dissolved. This should only take about 5 minutes. Now pour in your heavy cream and stir for a couple of minutes.
  2. Add in the bananas and stir to make sure they are well mixed with the syrup. Allow simmering for 2-3 minutes. Now add in the pecan pieces, salt, bourbon (optional), and the dash of cinnamon. Allow simmering once more for 4-5 minutes. Turn the heat down to low or simmer and add the vanilla extract.
  3. Now to make the French Toast, in a large shallow bowl, add the eggs, heavy cream, vanilla extract, sugar, and cinnamon. Whisk until the yolks and the whites are completely mixed with the rest of the ingredients.
  4. Turn your griddle on a medium to high heat and melt the butter and make sure that it spreads evenly across the griddle. Dip one piece of bread in the egg batter mixture at a time and allow to soak on each side for about 30-45 seconds. Place the toast on the grill and cook on each side for 3-5 minutes, until golden brown.
  5. When finished, place french toast on a plate and cover with some of the banana syrup. You can top with whipped cream and/or garnish with powdered sugar.
