Brussel Sprout was not a vegetable that was prepared for us growing up. In fact, I haven’t had Brussel Sprouts for the first time well within my twenties. Although I can’t remember the exact dish or where I was when I tried them for the first time, I do remember thinking they weren’t so bad. Sure the smell isn’t great and they can be a bit bitter, but if you add delicious flavor and add some friends to the dish, they could be quite delicious.

So let’s talk about adding flavor.

Sauteed Brussel Spouts with Bacon and Dried CranberriesWith a vegetable like Brussel sprouts, where the natural flavor isn’t something to rave about, you’re going to need some serious flavor. When making this dish, I knew that cooking the Brussel Sprouts in bacon fat was going to go a long way. Bacon has a ton of fat and flavor automatically. When cooking Brussel Sprouts in its rendered fat, it would only make sense that they would come out fabulous. Now that we got the foundation of flavor down, let’s add some friends.

Of course, it’s only natural to add the bacon to the dish for texture and some fun, but because bacon can be a bit salt and the Brussel Sprouts are a bit bitter, we need something to lighten the mood and I immediately thought of dried cranberries. The pop of sweetness is going to be a nice compliment to the rest of the payer in this dish. Combining all of these flavors together makes for this Sauteed Brussel Sprouts with Bacon and Dried Cranberries a great side dish.

If you don’t prefer dried cranberries, you can use pomegranate seeds and also add some chopped walnut for added texture and healthy stuff!

Ingredients

  • 16 oz. bag brussell sprouts
  • 1/2 lb. bacon
  • 3/4 c. dried cranberries
  • 2 garlic cloves, minced
  • salt and pepper to taste

Instructions

  1. Chop the bacon into small pieces. Place in a skillet over medium high heat and allow to cook until golden brown. While the bacon is cooking, slice the brussel sprouts into half and rinse thoroughly. Set aside.
  2. Once the bacon is complete, remove bacon pieces and set aside. Leaving the bacon fat in the skillet, add the brussel sprouts to the pan and allow to cook for 10 to 15 minutes until slightly crisp and browned. Return the cooked bacon back to the skillet and add the dried cranberries. Stir to mix well. Allow to cook for 5 minutes to allow all the ingredients to get to know each other. Add the minced garlic and cook for another 5 minutes. Add salt and pepper to taste (you may not need salt because the bacon and the fat from the bacon adds plenty but use your best judgement).
